The Ideal Roti:
The India flat bread or Roti is not just another dish on the Indian platter. It’s a traditional food that has its root to every Indian’s soul. Hot, soft and fluffy rotis are integral to the feeling of being home for us Indians. It’s round shape is considered as an icon of culinary achievement for the Indian homemakers.
Know Your Atta:
The product evaluation takes place at all stages of making a dish and roti is no exception—the first being the flour as it is whatwe can check at the time of purchase.
Flour :
A good quality atta is slightly grainy as it signifies choker. It is slightly off-white in colour. Remember, a white atta indicates that it has maida mixed in it. A good atta has this iconic smell of wheat.
Kneading it :
It should not feel very hard while kneading, and it definitely should not stick to the plate nor should it feel very loose.
Rolling :
It should not have any elasticity in it. It should be easy to roll, easy to spread. And Roti’s corner should not crack.
Baking :
Make sure the roti gets baked evenly. It is not supposed to have unbaked patches.
Serving :
The roti should be soft—so it can be broken with one hand, and it should melt in mouth.
